Adam Romo, Jr.
Chief Executive Officer

Adam joined eatZi's as its CEO in May 2011, to lead the company’s strategic expansion efforts. He previously served as the Company’s CFO from 1996 to 1999. A University of Texas at Austin alumnus, he began his career with KPMG, ultimately specializing in their Retail Practice Group. Adam then spent nine years with Brinker International (Chilis Grill and Bar, Maggiano’s) in a series of financial positions, ultimately as the CFO of eatZi’s Market & Bakery.

As a seasoned financial executive, Adam’s diverse career includes leadership roles with both multi-billion and emerging growth companies. In addition to his extensive experience with restaurant and retail companies, his broad based background includes technology, e-commerce, and the international logistics industries. He has worked for companies based in California, New York, and traveled extensively to work with clients in Europe, South America, and Asia.

 

Jay Valley

Chief Culinary Officer

Growing up in an Italian home in Clinton, Massachusetts, Jay Valley knew by the time he was 16 that he wanted to be a chef. At a young age Valley volunteered his time working in the kitchen at a nearby hospital, which is where he ultimately found his affection for culinary arts.

After graduating from the Worcester, Massachusetts Culinary Institute, Valley took his first position with the Crescent Court Hotel as it opened its doors in Dallas, Texas. In 1991, Valley joined the staff at The Mansion on Turtle Creek as the Catering Chef where he had the opportunity to collaborate with world-famous chefs such as Dean Fearing, Julia Child, Charlie Palmer and Wolfgang puck, among others.

Following a few culinary positions at various restaurants across the nation, Valley joined the eatZi’s Market and Bakery team in 1998 as Executive Chef, bringing his unparalleled culinary experience with him. In 2001, Valley was promoted to Corporate Executive Chef for eatZi’s, in charge of all things culinary. As the Chief Culinary Officer, Valley is responsible for the food culture and culinary operations.

Jay Valley lives with his wife and their son in Dallas, Texas. He enjoys spending time with his family.

 

Brian Snow
Vice-President of Finance

Raised in Lindale, Texas,  1.5 hours east of Dallas. He graduated from  Evangel University in Springfield, Missouri  in 1985 with a B.B.A in Accounting.  Upon graduation Brian moved to Dallas, Texas.   Having grown up so near Dallas and having had relatives in the area the move was a natural transition.

Brian’s first hands on experience  in the restaurant industry was when he was 7 years old at summer camp, where he washed dishes for four years.  His career in the restaurant industry began in 1985 when he worked for S&A Restaurant, Corp.  He began his career as a restaurant accountant for Bennigan’s, a casual dining concept of S&A Restaurant Corp.  That’s when he learned to love the energy and pace of the restaurant industry.  As a restaurant accountant and eventually a Regional Accounting Supervisor, he had the opportunity to spend a significant amount of time in the restaurants around the country.  He  saw the time, energy, and dedication it took the Operators to run a successful restaurant. 

During his 18 years with S&A Restaurant  Corp he had the opportunity to experience virtually every aspect of accounting  and corporate services.  He spent time in accounts payable and  receivable, financial analysis, franchise accounting, and corporate accounting.  While working at S&A Restaurant Corp, he attended and graduated from the University of Texas at Dallas with a Master’s Degree in Business Policy and Strategy in 1995.

In 2004, he  joined eatZi’s as an independent contractor  to help transition eatZi’s from a Brinker International concept to a new ownership group.  Shortly thereafter, he became a permanent employee and fan of eatZi’s.  Brian found eatZi’s to be  an exciting, unique concept with tremendous potential for growth.  When eatZi’s changed ownership in 2006, he was offered the exciting  opportunity to participate in the  revitalization and re-expansion of eatZi’s .  Since that time he  has played an important role in  working  diligently to improve sales and profitability while building a viable model for growth.  Brian is  very excited to be part of eatZi’s and looks forward to continued growth and success.

Brian is married with two children.  He enjoys spending time on the lake with family and friends.  He also loves to listen to and play music.  He plays  drums and bass guitar and loves 80’s rock!
